Pan-fried Cod with Root Mash

Ingredients

  • 4 x potatoes
  • 2 x carrot
  • 1 clove garlic
  • ¼ dl cream
  • 1 x beetroot
  • ½ x yellow onion
  • 3 tbsp butter
  • 1 x cod fillet
  • ¼ tsp salt
  • ¼ tsp black pepper

Method

  1. Dice potatoes, carrots and garli into cubes.
  2. Add the chopped vegetables to a pot of water and cook until tender. Begin the next step in while the vegetables are cooking.
  3. Dice beetroot and onion, and fry in a frying pan together with butter until the onion is soft. Set aside.
  4. In the same frying pan, fry the cod fillet for about 2-3 minutes on each side. Season with salt and pepper on both sides. The fish is done when it starts to flake.
  5. Pour off the water on the cooked vegetables. Add a tablespoon of butter and a splash of cream, and mash it all with a fork. Season with salt and pepper.
  6. Serve the root mash and cod fillet on a plate, and top with the beetroot and onion mixture.
