Love Your Leftovers Vegetable Dip!

  1. What? No ingredients to add to the shopping list? This dip you will make from your own ingredients. Look in your fridge and use your imagination! (The recipe is inspired by Jan Robin Ektvedt, chef at Golden Chimp and master of cooking what the fridge offers!)
  2. It's a real fantasy dip! The whole point is to make a dip of the foods you have at home. Find leftover vegetables you have in the fridge. We used Chinese cabbage, a sad carrot, a remnant of celery sticks, a tired half avocado and the stalk of a broccoli!
  3. We had half a can of sour cream, so we used it - but you can use natural yogurt, or something creamy you have leftover. We also had a little feta cheese left in a box, a clove of garlic, some olives in fact and sriracha.
  4. When you make this dip, it is only the imagination that stops you. Use what you have in the fridge and do not be afraid to make mistakes.
  5. Okay, so you've picked out the vegetables you want to use. Mince or grate them. We used a food processor. ;)
  6. Mix together the sour cream, yogurt, feta cheese, finely chopped garlic and sriracha - or what you have at home of a creamy consistency. Do not have sriracha - maybe you have some chili in the freezer?
  7. Then you mix the creamy mixture with the vegetables. If you have lemon, you can squeeze this over. And season with salt and pepper. Serve with chips!
