Weekly menu meat 12/2024
Spaghetti bolognese is always a hit, and this one is so easy to make that anyone who wants to can. If you have leftovers of the meat sauce, you can make pizza or calzone the next day ;)
Ingredients
- 2 clove garlic
- ½ x yellow onion
- 150 g minced meat
- 1 x carrot
- 1 can diced tomatoes
- 100 g dried pasta
- 2 handful fresh basil
- 2 handful parmesan
Method
- Start by mincing the garlic and the onion. In a skillet, heat a bit of coconut oil, regular oil, or butter, then sauté the garlic and onion until they turn soft.
- Add the ground beef and season generously with coarse ground pepper. Break up the beef into small pieces and cook for a few minutes until browned.
- Cut the carrot into small pieces and add them to the skillet.
- If you have celery, cauliflower, or any other root vegetables on hand, feel free to toss them in as well. For extra protein and texture, consider adding lentils or beans.
- Pour in the chopped tomatoes. For a bit of heat, you can add a dash of sriracha to taste. Let the meat sauce simmer for about 10 minutes to allow the flavors to meld.
- Meanwhile, bring a large pot of salted water to a boil. Cook the whole grain pasta until it's just tender, retaining a slight bite (al dente). Reserve some of the pasta water to adjust the consistency of the sauce if needed.
- Finely chop some fresh basil and stir it into the meat sauce along with grated parmesan cheese. Mix everything together well.
- Serve the meat sauce over the cooked pasta immediately, garnished with extra parmesan and basil if desired.
- Note: Consider making a double batch of the meat sauce to have leftovers for other dishes like pizza, calzone, gratin, or lasagna. Store any extra sauce in the refrigerator or freezer once it has cooled down.
