Vegetarian Weekly Menu 23/2023
A quick and protein-rich meal.
Ingredients
- 1 ½ dl rice
- 3 dl water
- 1 x carrot
- 3 x eggs
- 1 tbsp soy sauce
- 1 tbsp vegetable seasoning with seaweed from lofoten
- ½ tsp sriracha
- 1 handful chives
Method
- Rinse rice and add rice and water to a pot. Bring to a boil with the lid on and lower the heat. Let the rice steam for 12 minutes.
- When the rice is done, heat a frying pan with a little oil.
- Chop the carrot into small pieces and fry them for 2 minutes.
- Add the rice and cook for a few more minutes.
- Crack one egg per serving and stir it into the rice. Stir until cooked through. Add soy sauce, vegetable seasoning and sriracha and combine well. Transfer the rice to a plate.
- Add a little oil or butter to the pan and fry fried eggs.
- Serve immediately topped with finely chopped chives or spices.
