Fried Rice with Fried Eggs

Fried Rice with Fried Eggs

A quick and protein-rich meal.


  • 1 ½ dl rice
  • 3 dl water
  • 1 x carrot
  • 3 x eggs
  • 1 tbsp soy sauce
  • 1 tbsp vegetable seasoning with seaweed from lofoten
  • ½ tsp sriracha
  • 1 handful chives


  1. Rinse rice and add rice and water to a pot. Bring to a boil with the lid on and lower the heat. Let the rice steam for 12 minutes.
  2. When the rice is done, heat a frying pan with a little oil.
  3. Chop the carrot into small pieces and fry them for 2 minutes.
  4. Add the rice and cook for a few more minutes.
  5. Crack one egg per serving and stir it into the rice. Stir until cooked through. Add soy sauce, vegetable seasoning and sriracha and combine well. Transfer the rice to a plate.
  6. Add a little oil or butter to the pan and fry fried eggs.
  7. Serve immediately topped with finely chopped chives or spices.
