Boil the potatoes until soft, and mash them (preferably using leftover potatoes/mashed potatoes if you have any. You need about 1 dl leftover mashed potatoes per person.).
2
Make the dough by mixing together the mashed potatoes with plain white flour, dry yeast, salt, eggs and water. Knead the dough for about 10 minutes.
3
Sprinkle some flour on the kitchen counter and start shaping the dough into buns. Place the buns on a baking tray lined with baking paper, and let the buns rise for 45-60 minutes.
4
Mince the garlic and add to a bowl with sour cream. Season with pizza seasoning, salt andre the juice of half a lemon.
5
Bake the potato buns at 200 degrees celcius for about 10 minutes.
6
Slice the chicken breast in half horizontally and cook in a frying pan with some oil or butter. Season with salt, pepper and pizza seasoning.
7
Fill the potato buns with sour cream dressing, rocket, chicken and red onion.
8
If you follow the weekly menu, set aside half of the potato buns. They will be used in another dinner.
