Homemade Bread with Barley

Warm homemade bread with butter tastes so good, and this is one of my best bread recipes. Soak the barley a few hours before you plan to make the dough so it's ready for baking. This recipe makes one loaf from one serving. Use a stand mixer for best results.

  • 1 dl pearl barley
  • 9 dl plain white flour
  • ½ tsp salt
  • 4 dl lukewarm water
  • 25 g yeast
  • 1 tbsp honey
  • 3 tbsp olive oil

  1. Soak the barley overnight or a few hours before you start baking.
  2. Place the flour, salt, and soaked barley in the mixing bowl.
  3. Measure out the lukewarm water and stir in the yeast, honey, and oil until well combined.
  4. Knead the dough for 10 minutes, then cover the bowl with a plate. Set aside in a warm place to rise for 30 minutes.
  5. Wet your clean fingers with water and fold the dough in from the sides. Let it rise for another 30 minutes.
  6. Preheat the oven to 200°C (390°F).
  7. For this bread, I use a small baking tray measuring 20x30 cm. This size makes bread slices that fit perfectly in a lunchbox. Grease the tray with butter before adding the dough. Bake on the middle rack for 30 minutes. Cool on a wire rack with a warm cloth over it if you prefer a soft crust.
