Indulge in the exquisite delight of these tender, sweet, and moist Lucia buns adorned with pearl sugar. Tailored for December 13th celebrations, one serving produces around 16 generously sized buns.

- 150 g dairy butter
- 2 x eggs
- 25 g raisins
- 1200 g plain white flour
- 120 g sugar
- 1 tsp salt
- 3 tsp cardamom
- 2 tbsp turmeric
- 6 ½ dl milk
- 50 g yeast
- 2 handful pearl sugar

- Bring eggs and butter to room temperature by placing them on the counter. Optionally, dice the butter for easier incorporation. Soak raisins in water for enhanced flavor and softness in the final result.
- Use a stand mixer.
- Combine the dry ingredients to the bowl.
- Warm the milk to 30 degrees Celsius over low heat. Ensure the milk doesn't get too hot.
- Crumble the yeast and mix it with the milk until dissolved.
- Add the liquid and half of the egg to the dry ingredients and knead until it forms a smooth dough, approximately 5-6 minutes at low speed. Allow the dough to rest for 10 minutes.
- Combine cubed butter to the dough and knead for 4–6 minutes until the dough cleanly detaches from the bowl.
- Cover the bowl with a cloth or plate and place it in a warm spot for about 1 hour.
- Divide the dough into equal parts with a knife or dough cutter. Shape them into various saffron buns.
- In one bowl, whisk an egg. In another bowl, add pearl sugar. place the soaked raisins to the buns, brush with egg, and dip in pearl sugar before placing them on a baking sheet lined with parchment paper.
- Cover with a cloth and let them rise for an additional 30 minutes.
- Bake the buns at 200 degrees Celsius for 15 minutes. Enjoy them preferably warm.
