Warm homemade bread with butter tastes so good, and this is one of my best bread recipes. Soak the barley a few hours before you plan to make the dough so it's ready for baking. This recipe makes one loaf from one serving. Use a stand mixer for best results.

- 1 dl pearl barley
- 9 dl plain white flour
- ½ tsp salt
- 4 dl lukewarm water
- 25 g yeast
- 1 tbsp honey
- 3 tbsp olive oil

- Soak the barley overnight or a few hours before you start baking.
- Place the flour, salt, and soaked barley in the mixing bowl.
- Measure out the lukewarm water and stir in the yeast, honey, and oil until well combined.
- Knead the dough for 10 minutes, then cover the bowl with a plate. Set aside in a warm place to rise for 30 minutes.
- Wet your clean fingers with water and fold the dough in from the sides. Let it rise for another 30 minutes.
- Preheat the oven to 200°C (390°F).
- For this bread, I use a small baking tray measuring 20x30 cm. This size makes bread slices that fit perfectly in a lunchbox. Grease the tray with butter before adding the dough. Bake on the middle rack for 30 minutes. Cool on a wire rack with a warm cloth over it if you prefer a soft crust.
