Norwegian "Vannbakkels" with Whipped Cream

  • 2 ½ dl water
  • 125 g butter
  • 125 g plain white flour
  • 3 x eggs
  • 1 ½ dl heavy cream

  1. Boil water and butter to a saucepan, and remove from the heat.
  2. Stir in all the flour and return the pan to the plate. Stir a few times and make sure that the batter "releases" the pan.
  3. Remove the pan from the heat and add one egg at a time. Do not stir more than necessary.
  4. Spread the batter with a pastry injector or spoon on a baking tray with baking paper.One serving of this batter provides about 8 medium-sized "vannbakkels"
  5. Bake in the bottom of the oven at 200 degrees celcius for 35 minutes. NB: Do not be curious and open the door while baking. Then they will collapse. When the baking time due, I often leave the door closed for an other 5-6 minutes. Just to make sure they do not fall down.
  6. Cool off on a baking rack.
  7. Whip cream with a little sugar. Divide the "vannbakkels" just before serving, and fill with whipped cream. Sprinkle on top with icing sugar.
