Baked with a homemade red sauce made from leftover vegetables and tomatoes, served with crispy breadcrumbs! Yum! In this dish, you can use up any leftover vegetables you have in your fridge. By replacing the cheese with vegan cheese, the dish becomes vegan.

- 400 g plum tomato
- 2 x shallots
- 2 clove garlic
- 1 tsp sriracha
- 1 pinch sea salt flakes
- 1 pinch black pepper
- 300 g canned white beans
- 1 handful grated cheese
- 1 x slice of bread
- 1 handful rocket

- To a food processor, add tomato, shallot, garlic, sriracha, flaked salt and pepper. Check your fridge. If you have carrots, peppers, celery stalks or chillies, you can add them too. If you have half a can of tomato sauce or similar, you can use it here.
- If you don't have a food processor, you can mince all the vegetables instead.
- Combine the vegetables together into a red sauce. Add a little olive oil to a frying pan and let the red sauce simmer without a lid for 20 minutes.
- Rinse white beans under cold water and add them to an ovenproof dish. Pour over red sauce and grated cheese. Cool the leftover read vegetable sauce and set aside in a clean glass in the fridge. Bake the beans in the oven at 220 degrees for 15 minutes until the cheese is golden.
- Make chips out of bread. Cut a slice of bread into two thin slices with a sharp knife. It may be advantageous to sharpen the knife before doing this. If you haven't sliced your bread at the store, you can cut razor-thin slices.
- Heat a good amount of olive oil in a frying pan over a medium heat. Place the the slices of bread to the pan and salt with flaked salt. Fry on both sides until it is crispy. Leave them to cool on a rack.
- If you have some salad, spinach or arugula in the fridge, you can decorate the dish with some fresh leaves.
