Veiled Peasant Girl – a Norwegian Apple and Cream Dessert with Bread Crumbs

- 6 x apple
- ½ dl water
- 4 x slice of bread
- 3 tbsp butter
- 1 dl sugar
- ½ tsp cinnamon
- 3 dl heavy cream
- 2 tsp vanilla sugar
- 3 tbsp sugar

- Peel the apples and cut them into large pieces. Remove seeds and the hard parts of the seed casing. Put the pieces in a pot with water and sugar and bring them to a boil.
- When it boils, turn down the heat, put a lid on the pot and let it simmer until the apple pieces are tender and soft. It will usually take 10–15 minutes. Stir the pot from time to time so it doesn't stick to the bottom.
- Cool the apple mixture and mash with a potato masher or a fork. The applesauce must be cooled before you finish mixing the dessert.
- Place a frying pan on medium heat on the hob. Grate dry bread or crush breadcrumbs into crumbs. Melt the butter in the pan and add the crumbs, together with sugar and cinnamon. Fry the mixture until golden and crispy, this will take about 5 minutes. Cool the mixture.
- Put the cream and vanilla sugar in the mixing bowl, and whip it until creamy.
- Add applesauce, cream and the crispy crumbs in layers and leave the last layer as cream. Garnish the top with cinnamon or something else that is delicate and suitable for the season, such as some freshly picked violets.
