Beet and Pear Salad with Walnuts and Gorgonzola Cheese

ingredients

  • 1/2 x beetroot
  • 1/4 dl extra virgin olive oil
  • 1/4 tsp honey
  • 1/4 x lemon
  • 1/2 x pear
  • 1/2 x red onion
  • 1 handful rocket
  • 1/4 dl walnuts
  • 30 g blue cheese

method

  1. Cut beets into thinly sliced boats. Transfer to a baking tray and drizzle over some olive oil and salt. Bake in the oven at 200 degrees Celsius at 20-25 minutes.
  2. Make an easy vinaigrette by mixing together olive oil, honey and olive oil. Add salt and pepper to taste and set aside.
  3. Cut the pear and red onion into slices and add to a bowl together with the rocket, the baked beets and the walnuts. Pour over the vinaigrette and give it a light stir.
  4. Cut the Gorgonzola cheese and serve together with the salad.

Beet Burger with Gorgonzola Cheese

Beet Burger with Gorgonzola Cheese

ingredients

  • 3 1/2 dl plain white flour
  • 1/4 pack dry yeast
  • 1/2 tsp salt
  • 1 1/2 dl lukewarm water
  • 1 clove garlic
  • 1/2 x red onion
  • 1/2 x beetroot
  • 250 g cooked lentils
  • 1/2 dl walnuts
  • 1/4 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 tbsp plain white flour
  • 20 g blue cheese
  • 1 handful rocket

method

  1. Make the burger buns by mixing together flour, dry yeast, salt and lukewarm water to a bowl. Knead the dough for 10 minutes.
  2. Form the dough into equal sizes and shape into burger buns. Transfer to a baking tray and let rise for 45-60 minutes.
  3. Mince the garlic, red onion and walnuts, and grate the beet.
  4. Add the chopped veggies to a bowl together with lentils, salt, pepper and cumin. Mix together with a hand mixer. Fold in the flour.
  5. Form the dough into burger patties and transfer to the baking tray together with the burger buns. Bake in the oven at 200 degrees celcius for 15 minutes. Take out the burger buns, turn the burgers, top with gorgonzola cheese and bake the burgers for another 5-10 minutes.
  6. Serve the burgers in burger buns together with some red onion, rocket and whatever else you might like.
  7. Note: if you follow the weekly menu, you have to set aside half of the burgers and half of the burger buns. It will be used in other recipes this weekly menu.

Leftover Burgers on Toast with Homemade Beet Salad

ingredients

  • 1/2 x beetroot
  • 1/2 x pear
  • 1/2 x red onion
  • 1/4 x lemon
  • 1/4 dl crème fraîche
  • 1/2 handful rocket

method

  1. Note: We are using leftover burgers and leftover burger buns in this recipe that were made earlier this weekly menu.
  2. Start by making the beet salad. Grate the beets and the pear, and mince the red onion.
  3. Add the chopped ingredients to a bowl together with lemon juice and the creme fraiche. Mix well and add salt and pepper to taste.
  4. Toast the burger buns and warm up the burgers.
  5. Serve with rocket and beet salad.

Gorgonzola and Pear Pizza

Gorgonzola and Pear Pizza

ingredients

  • 3 1/2 dl plain white flour
  • 1/4 pack dry yeast
  • 1/2 tsp salt
  • 1 1/2 dl lukewarm water
  • 1/2 clove garlic
  • 1/2 dl crème fraîche
  • 1/2 x pear
  • 1/2 x red onion
  • 100 g blue cheese
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp honey
  • 1/4 dl walnuts

method

  1. Make the pizza dough by mixing together flour, dry yeast, lukewarm water and salt. Knead the dough for 10 minutes and leave it to rise for 45-60 minutes.
  2. Make a white pizza sauce by mincing the garlic and add it to a bowl together with the crème fraiche. Add salt and pepper to taste.
  3. Cut the pear, red onion and the Gorgonzola cheese into slices.
  4. Roll out the dough. Top with the white pizza sauce, cheese, red onion and pear and bake in the oven at 250 degrees Celsius for 10-15 minutes.
  5. Fry the walnuts in a frying pan at medium-low heat together with olive oil and honey until the walnuts turn golden.
  6. Serve the pizza with caramellized walnuts.
