Chickpea Masala with Homemade Naan

Chickpea Masala with Homemade Naan

ingredients

  • 2 1/2 dl plain white flour
  • 2 dl plain yogurt
  • 1/2 tsp salt
  • 1 dl rice
  • 175 g tikka masala sauce
  • 400 g chickpeas

method

  1. Start by making naan. Combine wheat flour, natural yogurt and salt in a bowl. Divide the dough into approximately equal parts, and use plenty of flour to roll each part into flatbreads.
  2. Cook the naan in a dry pan over medium heat until they have golden spots on both sides. Transfer to a plate and cover with a damp kitchen towel while preparing the rest of the dinner.
  3. Boil rice according to the instructions on the package.
  4. Heat the tikka masala sauce and chickpeas in a saucepan.
  5. Serve the chickpea masala over rice, with naan on the side.
  6. Set aside half of the naan if following the weekly menu. They will be used in another dinner.

Garlic Scampi with Rice

Garlic Scampi with Rice

ingredients

  • 1 dl rice
  • 2 clove garlic
  • 1/2 pack parsley
  • 1/2 x lemon
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 dl plain yogurt
  • 1/2 x red onion
  • 4 tbsp olive oil
  • 150 g scampi
  • 1/4 tsp chili spice

method

  1. Boil rice according to the instructions on the package.
  2. Mince the garlic and place half of it to a small bowl. Finely chop parsley and add half of it to the bowl of minced garlic. Squeeze half of the juice from the piece of lemon into the same bowl. Add yogurt, mix well, and season with salt and pepper.
  3. Mince the red onion and add to a frying pan, along with the rest of the garlic and some olive oil. Fry until the onion is soft.
  4. Add scampi. (It's up to you whether you wish to peel the scampi before or after frying). Add chili seasoning, the rest of the minced parsley and squeeze out the remaining lemon juice. Cook until done.
  5. Serve the scampi with rice and yogurt sauce.

Indian Soup with Naan

Indian Soup with Naan

ingredients

  • 1 clove garlic
  • 1 x red onion
  • 175 g tikka masala sauce
  • 1 dl cream

method

  1. For this dinner, we'll be using the leftover naan made earlier in the weekly menu.
  2. Mince garlic and cut the red onion and fry in a saucepan, along with some oil or butter, until the onion is soft.
  3. Add the tikka masala sauce, stir well and cook for 10 minutes.
  4. Pour in the cream at the very end, and make the soup completely smooth with an immersion blender. Season with salt.
  5. Serve the soup with leftover naan.

Creamy Shrimp Tagliatelle

ingredients

  • 100 g pasta tagliatelle
  • 150 g scampi
  • 1 clove garlic
  • 4 tbsp olive oil
  • 1/4 tsp chili spice
  • 1 dl cream
  • 1/2 pack parsley
  • 1/2 x lemon
  • 1/2 tsp salt

method

  1. Boil pasta in salted water.
  2. Peel the scampi.
  3. Mince the garlic and fry in a pan with olive oil and chili powder.
  4. Add in the shrimps and cook until they start turning pink.
  5. Next, add cream, parsley and lemon juice, and simmer. Season with salt.
  6. Fold the cooked pasta into the shrimp sauce and serve!
