Spaghetti Alfredo with Breaded Fish

Spaghetti Alfredo with Breaded Fish

ingredients

  • 100 g spagetti
  • 2 tsp salt
  • 2 x breaded fish filet
  • 1 clove garlic
  • 1 dl cream
  • 50 g parmesan
  • 1/2 x lemon
  • 1/2 pack parsley

method

  1. Bake breaded fish fillet in the oven according to the instructions on the package.
  2. Boil spaghetti in a saucepan with salt until the spaghetti is al dente.
  3. Mince the garlic and parsley.
  4. Fry minced garlic to a frying pan on medium heat for about half a minute. Add the cream and simmer.
  5. Pour the water off the spaghetti, but set aside half a deciliter of the pasta water.
  6. Add pasta water, grated parmesan, half a lemon juice and minced parsley to the cream sauce. Add the spaghetti to the sauce and taste with salt and pepper.

Broccoli Soup with Bacon and Parmesan

Broccoli Soup with Bacon and Parmesan

ingredients

  • 1 clove garlic
  • 1/2 x red onion
  • 1/2 x broccoli
  • 1 x vegetable bouillon
  • 5 dl water
  • 1/2 dl cream
  • 50 g diced bacon
  • 1/4 pack parsley
  • 25 g parmesan

method

  1. Chop the garlic, red onion and broccoli into pieces.
  2. Add the garlic and red onion to a saucepan with some oil or butter, and fry until the onion is soft.
  3. Add broccoli, vegetable bouillon and water and cook for about 15 minutes.
  4. Fry the bacon in a frying pan.
  5. Add cream to the soup and mix with an immersion blender. Season with salt and pepper.
  6. Serve the soup and top with crispy bacon, grated parmesan, finely chopped parsley and a few slices of bread.
  7. If following the weekly menu, set aside half of the broccoli soup. It'll be used in another dinner this week.

Breaded Fish with Fried Potatoes and Bacon

Breaded Fish with Fried Potatoes and Bacon

ingredients

  • 1 clove garlic
  • 3 x potatoes
  • 1/4 x broccoli
  • 50 g bacon
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 25 g parmesan
  • 2 x breaded fish filet

method

  1. Preheat the oven to 220 degrees celsius.
  2. Mince the garlic and cut the potatoes, broccoli and bacon into pieces.
  3. Mix the chopped veggies and bacon, and spread them out on a baking tray lined with baking paper. Sprinkle with salt and pepper. Bake in the oven for about 20 minutes.
  4. Take the vegetables out and grate some parmesan to sprinkle over. Sprinkle with parm and make room on the baking tray for the breaded fish. Bake everything together for another 15-20 minutes.
  5. Serve the breaded cod fillet on a plate with cheesy potatoes, bacon and broccoli.

Broccoli Gratin with Parmesan and Bacon

ingredients

  • 100 g diced bacon
  • 4 x potatoes
  • 1/4 x broccoli
  • 1/2 x red onion
  • 100 g parmesan
  • 1/4 pack parsley

method

  1. In this recipe we're using the broccoli soup made earlier in the weekly menu.
  2. Dice bacon and fry in a pan.
  3. Dice potatoes, broccoli and red onion. Add to a saucepan with water and carefully boil until the potatoes are almost completely cooked.
  4. Pour the water off of the vegetables and pour in the leftover broccoli soup. Stir and transfer to an ovenproof dish. Top with grated parmesan and bake at 200 degrees celsius for about 30 minutes.
  5. Top with finely chopped parsley.
