Spicy Pork Tacos with Corn Stew

Spicy Pork Tacos with Corn Stew

ingredients

  • 150 g pork chops
  • 1/2 pack juarez meat spice
  • 1 tbsp olive oil
  • 1 x yellow onion
  • 1 clove garlic
  • 1 tbsp butter
  • 100 g corn
  • 1 pinch chili flakes
  • 1/4 dl cream
  • 1 x tomato
  • 3 tbsp fresh coriander
  • 50 g feta cheese
  • 4 x tortillas
  • 1/4 x lime

method

  1. Marinate the meat in olive oil and spice and set aside.
  2. Cut the garlic and half of the onion. Fry in a pot together with butter and corn for a couple minutes.
  3. Add the cream and let simmer for 5 minutes. Mash it all together and add salt, pepper and chili flakes to taste.
  4. Fry the meat in a frying pan until the meat is fully cooked through. Cut into strips.
  5. Make a quick salsa by mincing the rest of the onion, tomato and coriander. Mix together.
  6. Serve the meat in a tortilla together with some salsa, corn stew and feta cheese. Finish with some lime juice and serve.
  7. Note: You have to set aside half of the corn stew if you follow the Weekly Menu. It will be used in another recipe.

Spicy Corn Soup with Crispy Bacon

Spicy Corn Soup with Crispy Bacon

ingredients

  • 75 g bacon
  • 1 clove garlic
  • 1 x yellow onion
  • 1 tbsp butter
  • 1/4 tsp chili flakes
  • 300 g corn
  • 5 dl water
  • 1 x vegetable bouillon
  • 1 dl cream
  • 1/2 x lime
  • 2 tbsp fresh coriander
  • 2 slices bread

method

  1. Bake the bacon in the oven at 220 degrees celcius for 10-15 minutes.
  2. Cut garlic and onion and add to a pot together with butter. Fry until the onion turn soft.
  3. Addd chili flakes and corn and fry for another minute before adding the veggie broth. Let simmer for 15 minutes.
  4. Add the cream and mash the soup with a hand mixer until smooth. Add salt, pepper and lime juice to taste.
  5. Serve the soup warm with crispy bacon, fresh coriander and bread.

Tortilla Pizzas with Bacon and Feta Cheese

Tortilla Pizzas with Bacon and Feta Cheese

ingredients

  • 75 g bacon
  • 1/2 clove garlic
  • 1/4 x yellow onion
  • 1 x tomato
  • 4 x tortillas
  • 100 g feta cheese
  • 50 g corn

method

  1. Bake the bacon in the oven at 220 degrees celsius for 10-15 minutes.
  2. Make an east pizza sauce by mincing the garlic, onion and the tomato and fry in a pot with some olive oil for a minute. Add a splash of water and let simmer for 5-10 minutes. Add salt, pepper and oregano (if you have any on hand) to taste.
  3. Top the tortillas with the pizza sauce, feta cheese, fried bacon and corn. Bake in the oven at 200 degrees celcius for 10 minutes.

Spicy Pork Steak Sandwich

Spicy Pork Steak Sandwich
Note: we are using corn stew in this recipe that were made earlier this Weekly Menu.

ingredients

  • 150 g pork chops
  • 1 tbsp olive oil
  • 1/2 pack juarez meat spice
  • 1/4 x lime
  • 1/2 x tomato
  • 1/4 x yellow onion
  • 4 slices bread
  • 50 g feta cheese
  • 2 tbsp fresh coriander

method

  1. Add the meat, spice and olive oil to a bowl and mix well. The meat will taste better the longer it marinates, but if you don't have time to wait, you can fry it immediately.
  2. Fry the meat in a frying pan on both sides until the meat is fully cooked through. Add some lime juice once the meat is done.
  3. Cut tomato and onion into slices.
  4. Add the meat to a slice of bread with corn stew, tomato, onion, coriander and a drizzle of feta cheese. Top with another slice of bread and serve.
