Whole Grain PIzza Buns

Whole Grain PIzza Buns

ingredients

  • 1 clove garlic
  • 1/2 x red onion
  • 1 x carrots
  • 200 g minced meat
  • 1/2 pack corn
  • 200 g diced tomatoes
  • 1 tsp oregano
  • 500 g whole wheat flour
  • 1/2 pack dry yeast
  • 1 tsp salt
  • 3 dl lukewarm water
  • 150 g cheese

method

  1. Mince the garlic, dice the red onion and grate the carrots. Fry the garlic and red onion in a frying pan with oil or butter, until the onion is soft.
  2. Add minced meat. When the meat is almost finished cooking, add grated carrot and corn, and cook a little longer.
  3. Add diced tomatoes and cook for about 10 minutes. Season with oregano, salt and pepper. Let the filling cool down while you start making the dough.
  4. Mix together whole wheat flour, dry yeast, salt and lukewarm water to a bowl, and knead the dough for about 10 minutes.
  5. Roll the dough out into a rectangle, and top with the meat filling and grated cheese. Roll it all up and slice into equal-size pizza rolls. Place them on a baking tray with baking paper.
  6. Let the rolls rise for about 45 minutes, before baking in the middle of the oven at 225 degrees celsius for about 20 minutes.
  7. Freeze any leftover pizza rolls for later!

Tex-Mex Burger in Homemade Buns

Tex-Mex Burger in Homemade Buns

ingredients

  • 250 g whole wheat flour
  • 1/4 pack dry yeast
  • 1/2 tsp salt
  • 1 1/2 dl lukewarm water
  • 1/2 clove garlic
  • 1 x avocado
  • 1/4 x lime
  • 1/2 pack corn
  • 1/2 x red onion
  • 200 g minced meat
  • 1/2 pack taco spice mix
  • 1/4 dl water
  • 1/2 dl sour cream

method

  1. Combine whole wheat flour, dry yeast, salt and lukewarm water, and knead the dough for about 10 minutes.
  2. Shape the dough into burger buns and let them rise on a baking tray lined with baking paper for about 45 minutes. Meanwhile, proceed to the next step.
  3. Next, make the guacamole. Mince the garlic, and add it to a bowl with avocado, lime juice and a pinch of salt. Mash everything together until you have a nice and smooth (or chunky) guac, and set aside.
  4. Dice the red onion and mix together with the corn. Set aside.
  5. Bake the hamburger buns in the middle of the oven at 225 degrees celsius for about 15 minutes.
  6. Combine minced meat, taco seasoning and a splash of water in a bowl, and shape the dough into burgers. Fry the burger patties in a frying pan on both sides until thoroughly cooked.
  7. Top the hamburger buns with burgers, guacamole, red onion and corn, sour cream and a handful of tortilla chips.

Chili sin Carne

Chili sin Carne

ingredients

  • 1 dl rice
  • 1 x red onion
  • 3 x carrots
  • 1 pack taco spice mix
  • 400 g diced tomatoes
  • 4 dl water
  • 400 g kidney beans
  • 1 pack corn
  • 1/2 x lime
  • 1/2 dl sour cream
  • 1/4 pack tortilla chips

method

  1. Boil rice according to the instructions on the package.
  2. Dice the onions and carrots and simmer in a pan until the onion is soft. Add the taco seasoning and simmer for another minute.
  3. Add diced tomatoes and water and cook for approximately 10 min.
  4. Add kidney beans and corn toward the end. Season with lime juice.
  5. Serve the chili over rice and top with sour cream, crushed tortilla chips and guacamole (if you have anything left from yesterday's dinner).
  6. If you follow the weekly menu, set aside half of the chili sin carne for another dinner.

Nachos with Leftovers!

Nachos with Leftovers!

ingredients

  • 3/4 pack tortilla chips
  • 50 g cheese
  • 1 dl sour cream
  • 1/4 x lime

method

  1. For this dinner we'll be using the chili sin carne leftovers from earlier in the weekly menu.
  2. Fill a casserole dish with tortilla chips, and top with the chili leftovers and grated cheese.
  3. Bake in the middle of the oven at 200 degrees celsius for about 10-15 minutes. Top with sour cream and fresh lime juice.
