Chicken with Mashed Sweet Potatoes and Beetroot Salad

ingredients

  • 1 x sweet potato
  • 1 x beetroot
  • 1/2 x green apple
  • 1/2 x red onion
  • 1/2 dl sour cream
  • 200 g chicken breast
  • 1 tbsp butter

method

  1. Dice the sweet potato, and boil in a pot of water until soft.
  2. Peel the beetroot. Then, grate it along with the apple and red onion. Mix in a bowl together with sour cream and season with salt and pepper.
  3. Cook the chicken fillet in a frying pan with your herbs/spices of choice.
  4. Once the sweet potato pieces are soft, pour out the water and add butter, salt and pepper. Mash with a fork or potato masher until smooth.

Kale Salad with Roast Sweet Potato, Beetroot and Feta Cheese

Kale Salad with Roast Sweet Potato, Beetroot and Feta Cheese

ingredients

  • 1 x sweet potato
  • 1 x beetroot
  • 1/2 pack kale
  • 1 tbsp olive oil
  • 1/2 x green apple
  • 1/2 x red onion
  • 100 g feta cheese

method

  1. Dice the sweet potato and beetroot and place on a baking tray lined with baking paper. Drizzle with olive oil, salt and pepper and bake in the middle of the oven at 220 degrees Celsius for about 20-25 minutes.
  2. Add kale and olive oil to a bowl, and massage the kale until softened. This step makes the kale less bitter, as well as easier to chew and digest.
  3. Dice the green apple and red onion and add to the kale bowl. Top with roast sweet potato, beetroot and crumbled feta cheese.

Baked Feta Pasta

Baked Feta Pasta

ingredients

  • 1/2 x red onion
  • 1/2 pack cherry tomatoes
  • 100 g feta cheese
  • 1/2 tsp salt
  • 1 tbsp pizza seasoning
  • 2 tbsp olive oil
  • 100 g pasta penne

method

  1. Dice the red onion and place in an ovenproof dish together with cherry tomatoes and the whole 100g block of feta cheese. Sprinkle with salt, pizza seasoning and drizzle with olive oil. Bake in the middle of the oven at 200 degrees celsius for about 30 minutes.
  2. Boil the pasta according to the instructions on the package.
  3. Fold the cooked pasta into the ovenproof dish and stir until the tomatoes and cheese are evenly distributed. Now serve!

Pasta Salad with Chicken

ingredients

  • 1 clove garlic
  • 2 dl sour cream
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 100 g pasta penne
  • 200 g chicken breast
  • 1/2 x red onion
  • 1/2 pack cherry tomatoes
  • 1/2 pack kale

method

  1. Mince the garlic and combine with sour cream, salt and pepper in a small bowl.
  2. Boil the pasta according to the instructions on the package.
  3. Fry the chicken fillet in a frying pan with your herbs/spices of choice.
  4. Slice the red onion and cherry tomatoes, and massage the chopped kale to make it a little softer.
  5. Drain and rinse the pasta in cold water so that it cools down and does not stick.
  6. Mix together pasta penne, chicken and vegetables together in a bowl and stir in the sour cream sauce.
