Chicken Breast with Cauliflower Rice and Greens

ingredients

  • 1 clove garlic
  • 150 g chicken breast
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp red pepper spice
  • 1 dl sour cream
  • 1/4 x cauliflower
  • 20 g kale
  • 1/5 x cucumber
  • 1/4 x red onion
  • 1/2 x tomato

method

  1. Mince the garlic, and add half in a bowl with the chicken fillet, olive oil, salt and red bell pepper powder. Mix together and let the chicken marinate for at least 20 minutes.
  2. Add the rest of the finely chopped garlic to a bowl of sour cream. Mix together, and season with salt and pepper.
  3. Stek kyllingen i en stekepanne på høy varme i cirka 8 minutter på hver side.
  4. Meanwhile, grate the cauliflower with a grater.
  5. Remove the chicken fillet from the frying pan and add the cauliflower rice. Let it fry for 3-4 minutes in the chicken fat.
  6. Cut up the kale, cucumber, red onion and tomato, and mix together with the cauliflower rice.
  7. Serve the chicken fillet with cauliflower rice, vegetables and garlic dressing.

Chicken in Cauliflower Tortilla

ingredients

  • 1/4 x cauliflower
  • 1 x eggs
  • 1 dl plain white flour
  • 1/2 clove garlic
  • 100 g chicken breast
  • 1/4 tsp red pepper spice
  • 1/4 tsp salt
  • 20 g kale
  • 1/5 x cucumber
  • 1/4 x red onion
  • 1/2 x tomato

method

  1. Grate cauliflower with a grater and place in a kitchen towel. Squeeze as much water from the cauliflower as you can.
  2. Mix together cauliflower rice and eggs, and dilute with flour until you have a fairly firm dough. If the dough gets too dry, add a few tablespoons of water.
  3. Roll out the dough into thin, small tortillas and bake on both sides in a dry frying pan. Store in a damp kitchen towel.
  4. Mince the garlic and fry in a frying pan with a little olive oil. Add the chicken fillet, salt and paprika seasoning and cook until the chicken is cooked through.
  5. Cut the vegetables.
  6. Fill the cauliflower tortilla with chopped vegetables and chicken, and top with the garlic dressing.
