- 1 x zucchini
- 3 x vegan sausages
- 1/4 x rocket
- 50 g feta cheese
- For this dinner, we'll use the hummus made earlier this week.
- Slice the zucchini in two, lengthwise, drizzle with a little olive oil and sprinkle with salt, before baking in the oven at 225 degrees celsius for about 30 minutes.
- Fry vegetarian sausages according to the instructions on the package.
- Dig out the light green flesh of the zucchini halves (do not discard! Freeze it and use later for woks, stews, etc.), and top with hummus, vegan sausages, rocket and feta cheese.
