Vegetarian Tacos


  • 200 g vegan mince
  • 1/2 pack taco spice mix
  • 1 x avocado
  • 1 clove garlic
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 x lime
  • 2 x tortillas
  • 1/2 x cucumber
  • 1/2 x red pepper
  • 1/2 x red onion
  • 1 dl sour cream
  • 50 g cheese
  • 1/4 pack spinach


  1. Cook the vegan mince in a frying pan with some oil or butter.
  2. Add taco seasoning and a splash of water to the mince, and mix well.
  3. Make guacamole by mashing an avocado, and add minced garlic. Blend together and season with salt, pepper and lime juice.
  4. Grate cheese, and dice cucumber, paprika and red onion.
  5. Fill tortillas with spinach, vegetables, sour cream, grated cheese and a dollop of guacamole.
  6. If you follow the weekly menu, you have to set aside half of the cooked vegan taco mince and guacamole. These will be used in another dinner.
