Vegetarian Taco with Sweet Potato
Sweet Potato Taco – The perfect opportunity to use some leftovers from your fridge! Chopped tomato, lettuce, corn, grated cheese, paprika - yes, anything you like. Tortillas are usually a little cheaper than taco shells at the store, so I've learned how to make my own tortilla lefse shells! And now you will learn it too! ;)


  • 2 x tortillas
  • 1 tsp olive oil
  • 1 pinch sea salt
  • 50 g sweet potato
  • 1 tbsp taco spice mix
  • 1 handful fresh baby spinach
  • 1/2 x red pepper
  • 1/2 x yellow onion
  • 1 x avocado
  • 1 handful grated cheese
  • 2 tbsp sour cream
  • 1/2 x lemon


  1. Make taco shells from lefser in this way. Grease the lefs with olive oil and salt them on one side. Heat the oven to 200 degrees. Hang the lefs on a wire rack so that it forms a shell that hangs upside down. Bake for about 7 minutes or until you see that it is golden around the edges. They harden when they cool down, so place them in such a way that there is room for the filling.
  2. Cut the sweet potato into small cubes and fry them with taco seasoning and a little water in a frying pan until they are tender.
  3. Fill the shells with baby spinach, chopped paprika, onion, sweet potato, sour cream, mashed avocado, grated cheese, sour cream and squeezed lemon juice.
