Vegetable Pie


  • 4 dl plain white flour
  • 1/2 tsp salt
  • 8 tbsp butter
  • 4 tbsp water
  • 1/2 x red onion
  • 100 g cherry tomatoes
  • 2 tbsp fresh basil
  • 4 x eggs
  • 1/2 dl milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 50 g mozzarella


  1. Combine flour, salt and cold butter in a food processor or by hand until you have a crumbly dough.
  2. Dilute with cold water until you have a perfectly smooth dough.
  3. Let the dough rest in the fridge for about 20 minutes.
  4. Roll the dough out on a baking sheet and place it on a baking tray. Use a fork to pierce the dough several places across the bottom to allow air to escape while cooking.
  5. Pre-bake the dough at 200 degrees celsius for about 10 minutes. Prepare the other ingredients.
  6. Chop red onion, cherry tomatoes and basil.
  7. Whisk together eggs, milk, salt and pepper and grated mozzarella in a bowl. Then add the chopped vegetables.
  8. Take the pie crust out of the oven and pour the egg-mixture into it. Bake for about 25-30 minutes.
