Vegetable Gratin with Fish Cakes and Bacon

ingredients

  • 20 g bacon
  • 2 x potatoes
  • 2 x carrots
  • 1/2 x cauliflower
  • 1 x yellow onion
  • 3 x fish cakes
  • 1 dl crème fraîche
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 50 g cheese
  • 20 g rocket

method

  1. For this dinner we'll be using leftover cauliflower soup from earlier in the weekly menu.
  2. Dice the bacon and fry in a pan until crispy.
  3. Cut potatoes, carrots, cauliflower, fish cakes and onions into cubes, and add to an ovenproof dish, along with creme fraiche, leftover cauliflower soup, salt and pepper. Stir to mix.
  4. Top with crispy bacon and cheese. Bake in the middle of the oven at 200 degrees celcius for about 30-40 minutes.
  5. Serve the vegetable gratin with rocket.
