Vegan Tacos


  • 200 g vegan mince
  • 1/2 pack taco spice mix
  • 1 clove garlic
  • 1 x avocado
  • 1/4 x lime
  • 1/2 x mango
  • 1/2 x romaine lettuce
  • 1/2 x red onion
  • 1/2 x tomato
  • 75 g corn
  • 4 x taco shells
  • 3 tbsp fresh coriander


  1. Cook the veggie mince along with taco seasoning in a frying pan until well cooked. If you're in doubt, it's better to cook it a little too long, as this gives it a meatier consistency.
  2. Make the guacamole by mincing garlic and add it to a bowl with avocado and lime juice. Mash until nice and chunky, and season with salt and pepper.
  3. Prepare the veggies. Slice the mango into small pieces, wash and tear romaine lettuce into pieces, dice the red onion and tomato and rinse the corn.
  4. Heat the taco shells according to the instructions on the package.
  5. Serve the veggie taco mince in shells along with vegetables, guacamole and fresh coriander.
