Vegan Sausages in Pitas with Hummus and Feta Cheese

ingredients

  • 1 clove garlic
  • 100 g chickpeas
  • 1/2 x lemon
  • 1/4 tsp salt
  • 1/4 tsp cumin
  • 3 tbsp olive oil
  • 2 x pita bread
  • 2 x vegan sausages
  • 1/2 x red onion
  • 1/4 pack rocket
  • 50 g feta cheese

method

  1. Chop the garlic and add to a bowl with the chickpeas, lemon juice, salt, cumin and olive oil. Use an immersion blender (or a small food processor) and blend until the hummus is smooth.
  2. Heat the pita breads and fry the vegan sausages according to the instructions on the package.
  3. Top the pitas with hummus, vegan sausages, diced red onion, rocket and feta cheese.
  4. If you follow the weekly menu, set aside half of the hummus. It'll be used in another dinner.
