Vegan Jackfruit Tacos

ingredients

  • 280 g jackfruit
  • 1 pack taco spice mix
  • 1/2 tsp turmeric
  • 3 x tortillas
  • 1/2 x red onion
  • 1/2 x red pepper
  • 1/2 x cucumber
  • 1/2 x lime
  • 1 x avocado
  • 1 handful fresh coriander
  • 1/4 x lime
  • 1/2 pinch garlic powder
  • 1/2 pinch salt
  • 1/2 pinch black pepper
  • 1 pack vegan sour cream
  • 1 x taco salsa
  • 2 tbsp vegetable oil

method

  1. Wrap the tortillas in foil and let it heat in the oven on low heat for approx. 10-15 min.
  2. Put the jackfruit in a kitchen towel and squeeze out all the water until you are left with only the meat.
  3. Transfer the jackfruit to a pan and use a wooden spoon to divide the jackfruit into smaller pieces. Fry over medium heat with some cooking oil until the meat gets a little color, approx. 3-4 min.
  4. Sprinkle with turmeric powder and mix well before adding the taco seasoning with a little water. Cook until the water evaporates.
  5. Rinse and cut up all the vegetables and place in bowls ready to serve. Finally, make guacamole by mashing the avocado in a small bowl before adding the seasoning. Season with salt and lime juice.
  6. Top the tortillas with vegan sour cream and tortilla sauce.
