Vegan Honey


  • 7 1/2 dl apple juice
  • 2 1/2 dl sugar
  • 1/2 dl lemon


  1. Add all the ingredients to a saucepan and stir until everything is well mixed.
  2. Bring to the boil, then let the mixture simmer for 30-40 minutes on medium-low heat. Stir well during the process. Note: It is good if it fizzes a little towards the end of the cooking time, and the mixture should be somewhat thin. It will solidify as it cools.
  3. Cool for a few minutes before transferring the mixture to a glass jar with a lid. Let it rest in a cool place for about 30 minutes before putting it in the fridge. After 1-2 hours the mass should thicken.
  4. Our recommendation: Add some butter on a toasted loaf and spread with the vegan honey. Top with strawberries and whipped cream and you have the snack of all time!
