Taco Soup

ingredients

  • 1/2 x red onion
  • 1/2 pack taco spice mix
  • 400 g diced tomatoes
  • 1/2 pack kidney beans
  • 5 dl water
  • 1/2 x lime
  • 1/4 pack feta cheese
  • 1/2 x avocado
  • 1/2 pack tortilla chips

method

  1. Dice the red onion and cook in a saucepan over medium heat with a tiny bit of oil until soft.
  2. Add taco seasoning along with the onion and let it simmer for a little minute.
  3. Add diced tomatoes, kidney beans and water, and cook for 10 min.
  4. Use an immerison blender to make the soup as smooth as you'd like. Season the soup with fresh lime juice.
  5. Top the soup with avocado puree, feta cheese and tortilla chips.
