- 1/2 x red onion
- 1/2 pack taco spice mix
- 400 g diced tomatoes
- 1/2 pack kidney beans
- 5 dl water
- 1/2 x lime
- 1/4 pack feta cheese
- 1/2 x avocado
- 1/2 pack tortilla chips
method
- Dice the red onion and cook in a saucepan over medium heat with a tiny bit of oil until soft.
- Add taco seasoning along with the onion and let it simmer for a little minute.
- Add diced tomatoes, kidney beans and water, and cook for 10 min.
- Use an immerison blender to make the soup as smooth as you'd like. Season the soup with fresh lime juice.
- Top the soup with avocado puree, feta cheese and tortilla chips.
