Taco salad with Black Beans and Peamole

ingredients

  • 300 g black beans
  • 1 pack taco spice mix
  • 100 g corn
  • 1/2 x romaine lettuce
  • 50 g cheese
  • 25 g tortilla chips
  • 1/2 dl sour cream
  • 1/4 x lime

method

  1. For this dinner, we used pickled red onion, pickled radish and peamole that were made earlier in the weekly menu.
  2. Add black beans, taco seasoning, corn and a splash of water in a frying pan, and cook until the water has disappeared from the pan.
  3. Chop romaine lettuce.
  4. Fill a bowl with the bean filling, chopped lettuce, grated cheese, crushed tortilla chips, peamole, sour cream, pickled radish, pickled red onion an lime.
