- 1 x sweet potato
- 1 pack halloumi cheese
- 2 tbsp honey
- 2 tbsp olive oil
- 1/2 x mango
- 1/2 x cucumber
- 1 x red pepper
- 1/2 x red onion
- 1/2 x avocado
- 4 x tortillas
method
- Preheat the oven at 220 degrees celsius.
- In a bowl, mix together oil and honey. Cut the sweet potato and halloumi into thin slices. Butter over the mixture.
- Bake the sweet potato in the oven for about 15 minutes or until you get a golden crust. At the same time you can fry the halloumi in a dry pan.
- Chop up the rest of the vegetables and fruits and fill the tortillas with the baked sweet potato, halloumi and vegetables.
