Sweet Potato Wraps

ingredients

  • 1 x sweet potato
  • 1 pack halloumi cheese
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 1/2 x mango
  • 1/2 x cucumber
  • 1 x red pepper
  • 1/2 x red onion
  • 1/2 x avocado
  • 4 x tortillas

method

  1. Preheat the oven at 220 degrees celsius.
  2. In a bowl, mix together oil and honey. Cut the sweet potato and halloumi into thin slices. Butter over the mixture.
  3. Bake the sweet potato in the oven for about 15 minutes or until you get a golden crust. At the same time you can fry the halloumi in a dry pan.
  4. Chop up the rest of the vegetables and fruits and fill the tortillas with the baked sweet potato, halloumi and vegetables.
