Salad with White Beans
In this dish, you can use tinned beans but I prefer dried beans. They simply taste much better. To make dried beans ready for salad, do the following: Soak 1 part of beans in water the day before (for at least 8 hours) Strain and rinse well with water. Cook them with 2 parts water on a low heat until they are completely tender. Strain off. Now lets make salad!


  • 10 x cherry tomatoes
  • 1 x red onion
  • 2 x spring onion
  • 1 handful parsley
  • 100 g white beans
  • 3 tbsp pomegranate seeds
  • 1 tbsp pomegranate syrup
  • 1 tsp ground sumac
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 2 pinch black pepper
  • 2 pinch salt


  1. Cut the tomatoes into quarters. Cut the onion into strips. Chop spring onions and parsley.
  2. To a bowl, mix all ingredients together. Set aside to rest for 5 minutes before serving. Enjoy!
