Raw Vegan Pistachio and Raspberry Bites

ingredients

  • 100 g oats
  • 1 tbsp cashew butter
  • 70 ml maple syrup
  • 100 ml oat milk
  • 50 g pistachios
  • 60 g cashew butter
  • 60 g pistachio butter
  • 200 ml oat milk
  • 130 ml coconut oil
  • 80 ml maple syrup
  • 50 g pumpkin seeds
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 200 g raspberries
  • 100 ml maple syrup
  • 80 ml coconut oil

method

  1. The ingredients are counted for a regular tray 30x20cm in size, if you have selected the app for 20 portions. Adjust the quantities if you wish to prepare a different quantity.
  2. The base: Mix the first 5 ingredients in a food processor and spread the mixture in a cooking tray with baking paper on the bottom.
  3. The pistachio layer: Mix the next 8 ingredients in a high speed blender till the mixture is silky. Place it on top of the base and introduce it in the freezer for 20-30 mins until it hardens a little.
  4. Raspberry layer: Mix the last three ingredients in a high speed blender and pour it over the first 2 layers and reintroduce it in the freezer for another 2-3h. Then defrost it in the fridge and store it there for the entire time. Top it with pistachios and fresh raspberries and enjoy!!
