Raw Vegan Peanut-Choco Bars

ingredients

  • 100 g almond flour
  • 100 g pecans
  • 100 g peanuts
  • 8 x medjool dates
  • 2 tbsp raw cacao
  • 50 ml coconut oil
  • 50 ml water
  • 100 g cashews
  • 6 x medjool dates
  • 2 tbsp peanut butter
  • 150 ml coconut oil
  • 100 ml water
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 100 g peanuts
  • 50 ml raw cacao
  • 30 ml maple syrup
  • 1 tbsp raw cacao

method

  1. The ingredients are calculated for a 30x20cm oven tray if you have set the app to 16 portions. Adjust the specified amounts if you want to make a larger or smaller cake.
  2. Start by melting the coconut oil on bain marie. Mix the first 7 ingredients in a food processor until the mixture has a sticky consistency. Spread the mixture in an oven tray with baking paper at the bottom and continue with preparing the peanut layer.
  3. Mix the next 7 ingredients in a high speed blender till the mixture is silky and smooth and pour it on top of the base. Spread 100g peanuts evenly over the tray and introduce it in the freezer for 20-30 mins until it hardens a little.
  4. Start by grating the cocoa butter and melt it on bain marie. Mix together with maple syrup, 1 tablespoon cocoa powder and drizzle on top of the cake.
