Quick Omelette with Vegetables

ingredients

  • 1 x spring onion
  • 1 x carrots
  • 1/2 x tomato
  • 2 x radish
  • 3 x eggs
  • 1/2 dl coconut milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper

method

  1. Thinly slice the spring onions, carrots, tomatoes and radishes.
  2. Whisk together eggs, coconut milk, salt and pepper.
  3. Fry the vegetables in a frying pan with oil for a minute. Then pour in the egg mixture, reduce the heat and let the omelette cook with the lid on for about 7-8 minutes.
  4. Serve with some slices of bread.
