Ingredients
- 2 x puff pastry sheet
- β x pumpkin
- Β½ x red onion
- 1 handful kale
- 50 g feta cheese
- ΒΌ x pomegranate
Method
- Let the puff pastry sheets thaw till room temperature.
- Peel the pumpkin. Cut into cubes and add to a pot with well salted water. Bring to a boil and let simmer until the pumpkin cubes turn soft.
- Pour away the water from the pumpkin and mash the pumpkin until smooth. Add salt and pepper to taste.
- Roll together the puff pastry sheets. Use a fork to poke out holes around the dough. Top with mashed pumpkin, red onion, kale and feta cheese. Bake in the oven at 225 degrees celcius for 15-20 minutes.
- Serve with pomegranate seeds.
