Puff Pastry Pumpkin Pie with Feta Cheese


  • 2 x puff pastry sheet
  • 1/8 x pumpkin
  • 1/2 x red onion
  • 1 handful kale
  • 50 g feta cheese
  • 1/4 x pomegranate


  1. Let the puff pastry sheets thaw till room temperature.
  2. Peel the pumpkin. Cut into cubes and add to a pot with well salted water. Bring to a boil and let simmer until the pumpkin cubes turn soft.
  3. Pour away the water from the pumpkin and mash the pumpkin until smooth. Add salt and pepper to taste.
  4. Roll together the puff pastry sheets. Use a fork to poke out holes around the dough. Top with mashed pumpkin, red onion, kale and feta cheese. Bake in the oven at 225 degrees celcius for 15-20 minutes.
  5. Serve with pomegranate seeds.
