Pea Burgers with Tortilla Chips and Pickled Veggies

  • 4 slices bread
  • 300 g frozen peas
  • 1/2 x red onion
  • 1 clove garlic
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1/4 x lime
  • 1/4 x romaine lettuce
  • 1/4 dl sour cream
  • 25 g tortilla chips

  1. For this dinner we used pickled red onion and pickled radish that were made earlier in the weekly menu.
  2. Crumble half the sliced bread into crumbs and fry in a frying pan until the bread crumbs turn golden.
  3. Thaw the peas by soaking them in boiling water for about 1 minute.
  4. Cut the red onion and garlic, and add to a food prosessor together with the peas, bread crumbs, salt, pepper, olive oil and lime juice. Mix until you have a smooth dough (you can mash everything by hand if you don't have a food prosessor).
  5. Form the dough into burgers, and place on a baking tray lined with baking paper. Bake in the middle of the oven at 225 degrees celcius for about 20 minutes. Turn halfway.
  6. Serve the pea burgers on the remaining slices of bread together with sour cream, lettuce, tortilla chips, pickled red onion and pickled radish.
