Pasta Salad with Chicken and Pesto


  • 200 g fusilli
  • 200 g chicken breast
  • 1 clove garlic
  • 1/2 x yellow onion
  • 3 tbsp sun-dried tomatoes
  • 100 g champignon
  • 3/4 pack green pesto
  • 1/2 pack rocket


  1. Boil the pasta according to instructions on the package.
  2. Cut the chicken breast into pieces and cook in a frying pan until cooked all the way through.
  3. Mince the garlic, and slice the onion and mushrooms.
  4. Fry sun-dried tomatoes (chopped, if bought whole), garlic, onion and mushrooms in a frying pan until the onion is soft and the mushrooms have reduced in size.
  5. Drain the pasta and rinse in cold water until cooled properly.
  6. Add the pasta to a large bowl, along with the fried chicken, vegetables and pesto. Mix to combine.
  7. Add the rocket and season with salt and pepper.
