Omelette with Potato, Tomato, Feta and Leaks

ingredients

  • 1 clove garlic
  • 1/4 x leeks
  • 1 x potatoes
  • 1/2 x tomato
  • 3 x eggs
  • 1 pinch salt
  • 1 pinch black pepper
  • 50 g feta cheese

method

  1. Mince the garlic and leaks, and cut potato and tomato into thinly slices.
  2. Fry garlic, leaks and potatoes in a frying pan with lots of olive oil.
  3. Whisk together the eggs with salt and pepper and pour over in the frying pan. Top with tomatoes and feta cheese, and fry under a lid on medium heat for about 5-8 minutes.
  4. Serve the omelette warm.
