Ingredients
- ½ x cucumber
- 1 clove garlic
- 3 dl plain yogurt
- ½ x lemon
- ¼ x rocket
Method
- For this dinner we'll be using the chickpea filling, hummus and pita bread that were made earlier this week.
- Start making the tzatziki by grating the cucumber. Place the grated cucumber in a kitchen towel, wrap it in nicely and squeeze out as much water as you can.
- Mince the garlic and add to a bowl along with the grated cucumber and yogurt. Season with salt, pepper and lemon juice.
- Place the rocket, chickpea filling, hummus, tzatziki and pita bread on a plate, mezze-style and serve.
