Lumpia

Lumpia, also called Lumpiang Shanghai are Filipino spring rolls. Great as a starter or snack, and very easy to make!

Ingredients

  • 1 x carrot
  • 1 pack phyllo dough
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 2 pinch black pepper
  • 2 pinch salt
  • 1 tsp grated ginger
  • 300 g pork mince
  • 2 tbsp fresh coriander
  • 2 x spring onion
  • 4 x water chestnut
  • 2 clove garlic
  • 1 x yellow onion

Method

  1. Heat neutral oil to 180-200 C, and fry the lumpia for 4-5 minutes, until they are golden and crispy.
  2. Place the filling on the spring roll sheets and roll into long spring rolls. (The easiest way is to use a piping bag, if you have this). Brush with a little water or egg to glue the edges together.
  3. Finely chop the onion, garlic and water chestnuts. Coarsely grate the carrot on a grater, and roughly chop the spring onions and coriander. Mix this together with the rest of the ingredients in a bowl.
  4. Serve with sweet chili sauce!
