Linda's Feta and Pasta Salad with Sweet Potato and Plums

ingredients

  • 1/2 x sweet potato
  • 100 g fusilli
  • 75 g feta cheese
  • 50 g lettuce
  • 1 x red pepper
  • 5 x plums

method

  1. Peel and dice the sweet potato. Drizzle with a little oil and your herbs/spices of choice, and bake in the oven at 200 degrees for 15-20 minutes or until soft..
  2. Meanwhile, boil the pasta according to the instructions on the package. Drain, and cool under running water.
  3. Place the pasta in a large bowl and mix with crumbled feta. Divide the plums and vegetables into pieces (as big or small as you'd like) and mix everything together, including the roast sweet potato. That's it! A great recipe for lunch or dinner :)
