Lemon-Blueberry Muffins

ingredients

  • 2 x eggs
  • 1 tsp vanilla sugar
  • 1 x organic lemon
  • 6 tbsp vanilla kesam
  • 1 tsp baking soda
  • 150 g whole wheat flour
  • 4 tbsp sugar
  • 1/2 tsp salt
  • 2 handful blueberries

method

  1. Preheat the oven at 180 degrees celsius.
  2. Whisk together eggs, quark, lemon juice and zest from one lemon.
  3. Sift the dry ingredients and stir in the blueberries.
  4. Transfer the batter into muffin tins.
  5. Bake for about thirty minutes.
