Enjoy this exciting combination of Korean flavors together with omelette wrapped in a crispy tortilla. A perfect dish as a quick and tasty breakfast, lunch or dinner. One portion gives two tortillas.
Ingredients
- 2 x eggs
- 2 x small tortillas
- 20 g kimchi
- 2 handful grated cheese
- 1 handful cabbage
- 1 x asian green onions
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp water
- ½ tbsp sesame oil
- 2 pinch sesame seeds
Method
- Heat a small frying pan with butter. Crack one egg and stir it together in a small glass or bowl. Add it to the frying pan and let it set a bit. Place one tortilla on top and let it stick to the egg. Fry for about 1 min.
- Flip the tortilla over and let it fry on medium heat for about 1 min. Top with a handful of cheese and place kimchi on one side. Fry until the cheese has melted and the tortilla is golden.
- Slice the cabbage and Asian spring onions. Place this on one side of the tortilla, and fold the opposite side over.
- Repeat until you have finished making all the omelettes.
- Combine soy sauce, rice vinegar, water, sesame oil and sesame seeds to make a sauce. You can add some finely chopped spring onion, chives or fresh coriander, if you like.
- Dip the omelette in the sauce and enjoy!
