Kimchi Omelette in Tortilla

Enjoy this exciting combination of Korean flavors together with omelette wrapped in a crispy tortilla. A perfect dish as a quick and tasty breakfast, lunch or dinner. One portion gives two tortillas.

Ingredients

  • 2 x eggs
  • 2 x small tortillas
  • 20 g kimchi
  • 2 handful grated cheese
  • 1 handful cabbage
  • 1 x asian green onions
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp water
  • ½ tbsp sesame oil
  • 2 pinch sesame seeds

Method

  1. Heat a small frying pan with butter. Crack one egg and stir it together in a small glass or bowl. Add it to the frying pan and let it set a bit. Place one tortilla on top and let it stick to the egg. Fry for about 1 min.
  2. Flip the tortilla over and let it fry on medium heat for about 1 min. Top with a handful of cheese and place kimchi on one side. Fry until the cheese has melted and the tortilla is golden.
  3. Slice the cabbage and Asian spring onions. Place this on one side of the tortilla, and fold the opposite side over.
  4. Repeat until you have finished making all the omelettes.
  5. Combine soy sauce, rice vinegar, water, sesame oil and sesame seeds to make a sauce. You can add some finely chopped spring onion, chives or fresh coriander, if you like.
  6. Dip the omelette in the sauce and enjoy!
