Grilled Burritos

ingredients

  • 200 g kidney beans
  • 1/2 pack taco spice mix
  • 1/3 x tomato
  • 1/2 x red onion
  • 1/3 pack fresh coriander
  • 4 x tortillas
  • 50 g spinach
  • 100 g corn
  • 50 g cheese
  • 50 g tortilla chips
  • 1 dl sour cream
  • 1/2 x lime

method

  1. For this dinner we'll be using the guacamole made earlier in the weekly menu.
  2. Fry the kidney beans and taco seasoning in a pan and mix well.
  3. Dice the tomato and red onion, and roughly the coriander.
  4. Place spinach, kidney beans, chopped vegetables, corn and cheese in the centre of the tortilla and fold like a burrito.
  5. Bake in a sandwich maker or waffle iron for about 5 minutes.
  6. Serve with tortilla chips, sour cream, guacamole and lime.
