Fluffy Pancakes with Currants and Sourcream

ingredients

  • 2 tbsp butter
  • 1 x eggs
  • 2 dl plain white flour
  • 1 dl oats
  • 4 dl oat milk
  • 1 tsp baking powder
  • 1 pinch salt
  • 2 dl currants
  • 2 tbsp sugar
  • 1 dl sour cream

method

  1. Melt the butter.
  2. Mix melted butter, eggs, wheat flour, oatmeal, oat milk, baking powder, salt and a little sugar (if desired) in a blender. Mix for 1 minute.
  3. Stir currants and sugar together. Taste with more sugar if you want it sweeter.
  4. Fry the pancakes on a medium hot plate with a little butter. Serve immediately with sour cream and freshly stirred currants.
