Fish Cakes with Coleslaw and Sweet Potato Fries

ingredients

  • 1 x sweet potato
  • 2 x fish cakes
  • 1 tbsp ketchup

method

  1. For this dinner we'll be using the rest of the leftover coleslaw from in the weekly menu.
  2. Cut the sweet potato into slightly thicker-than-fries fries (they shrink when baked). Sprinkle with salt and pepper and bake in the centre of the oven at 225 degrees celcius for 15-20 minutes.
  3. Cook the fish cakes in a pan until golden on both sides.
  4. Serve the fish cakes with sweet potato fries, leftover coleslaw and ketchup.
