Faloodeh - an Iranian delicacy


  • 200 g sugar
  • 400 g water
  • 2 tbsp rose water
  • 250 g thin rice noodles
  • 1 x lime


  1. Mix sugar and water in a saucepan. Bring it to a boil while stirring. Add rose water and mix well. Remove from heat and allow to cool. When the syrup has cooled, pour it into a bowl or something similar. Put it in the freezer for at least six hours, preferably overnight. The consistency of the syrup should be like sorbet when it hardens.
  2. Boil 2-3 liters of water in a pot and add the noodles. Let the noodles cook until they soften, about 3-4 minutes. Drain the noodles and rinse in cold water. Cut the noodles with scissors if you don't want them to be long.
  3. When serving, toss some of the noodles with some of the "ice sorbet". Finally add some lime juice.
  4. The noodles can be stored in cold water in the refrigerator for a few days. And the sugar mixture can be kept in the freezer for several weeks.
