Easy Potato and Lentil Soup

ingredients

  • 1 clove garlic
  • 1/2 x red onion
  • 2 x potatoes
  • 1 tbsp tomato puree
  • 5 dl water
  • 1 x vegetable bouillon
  • 200 g cooked lentils
  • 1 handful spinach

method

  1. Mince the garlic and cut the red onion. Fry in a pot together with some butter or oil until the onion turn soft.
  2. Cut the potatoes into cubes and add to the pot together with tomato puree. Fry for a minute or so before you add the vegetable stock.
  3. Let simmer under a lid for about 20-30 minutes. Add lentils and spinach at the end of the cooking time.
  4. Add salt and pepper to taste, and serve.
