Easy Homemade Aioli

ingredients

  • 1/2 clove garlic
  • 1/2 x egg yolk
  • 1/8 x lemon
  • 1/2 dl olive oil
  • 1 pinch salt
  • 2 slices bread
  • 1/2 handful rocket
  • 1/2 x tomato
  • 1/4 x cucumber

method

  1. Mince the garlic and separate the egg yolk from the egg white.
  2. Add garlic, egg yolk, lemon juice, olive oil and salt (in that exact order) to a tall glass that rooms your hand blender.
  3. Put the hand mixer carefully down at the bottom of the glass, and mix on high speed while carefully bringing the hand mixer upwards as the aioli gets white and thickened. It is very important to do this slowly, or else it might separate.
  4. Serve the aioli for brunch together with some toasted bread, greens and some cold cuts.
